This is the perfect dressing for strong flavored salad greens, i.e. kale, spinach, etc. It requires very little amount to dress a salad and bring out the flavors of the ingredients. It has a depth in the dressing due to the dark balsamic vinegar and the extra virgin olive oil. That is balanced with the sweetness of honey in addition to the bite of whole grain mustard and crushed fresh garlic.
