No need to order in! This Chinese Chicken Salad recipe makes a hearty, filling and very satisfying restaurant quality lunch. Fill up with fresh and crisp vegetables, savory and addictive sesame dressing and crunchy toppings.

To save even more time, make this meal in 5 minutes by using prepacked salad mixes and rotisserie chicken, to make a quick takeaway lunch for a busy workday. Cheap, healthy and oh so delicious.

½ cup Eat Simply by dora’s Sesame Dressing

Optional: 1 teaspoon of finely grated ginger

2 cups chopped Iceberg or Romaine lettuce

½  cup shredded Red Cabbage

1 carrot cut into matchsticks

1 stalk diced green onion

1 cup shredded cooked chicken breast

Almond nibs 

Fried wonton skins

Roasted Sesame Seeds

  1. Assemble the salad by layering the lettuce, cabbage, carrots and green onions in a large serving bowl.

  2. For the chicken breast, you can use shredded up leftover rotisserie chicken, or just pop a chicken breast lightly seasoned with salt, pepper and a drizzle of olive oil (optional a tablespoon of soy sauce) in the oven at 350 degrees F, for 13 to 15 minutes. Let the chicken cool, then shred with two forks and add to vegetables in the serving bowl.

  3. Toss Eat Simply by dora’s Sesame Dressing with salad. You can opt to brighten the flavors by stirring in a teaspoon of grated ginger into the dressing before tossing it with the salad. If the dressing is too thick, add a tablespoon of water to loosen the dressing.

  4. Sprinkle some almond nibs, roasted sesame seeds and crunchy fried wonton skins, if desired. Serve immediately.
